Chicken and Egg Fried 'Rice'

Serves 1


125g chicken sliced

½ yellow pepper sliced

½ red pepper sliced

1/2 red onion sliced

Handful frozen peas

1 egg

Handful spinach

½ tbs olive oil

2 tbs soy sauce

1 tsp chilli flakes

1 sachet cauli rice microwaved


Heat oil in a frying pan, add chicken and stir fry until cooked through, now add onion, peppers and soy sauce. Stir fry for a few more minutes and add peas, now add chilli flakes and cauli rice. Crack egg into pan and mix everything up – cook for a further minute or until egg is combined and cooked through.
