Spicy Tomato Chicken and Cous Cous
50g cous cous
100g frozen mixed veg
200ml veg stock
1 tbs olive oil
½ red onion chopped
½ red pepper chopped
½ tsp garlic salt
½ tsp onion granules
½ tsp chilli flakes
Handful asparagus tips
1 chicken breast filletchopped
½ cup passata
2 tsp Worcestershire sauce
Add the veg to apan of boiling water and boil for 5-6 mins. Cover cous cous with veg stock. Meanwhile, heat olive oil in a frying pan and gently fry the chopped onion and peppers, sprinkle with garlic salt, onion granules and chilli flakes, plus a good grind of pepper and Himalayan pink salt. Add the asparagus tips to the pan.
Fry for a few mins and add chicken pieces to middle of pan, fry for 8-10 mins until cooked through and no pink remains then add passata, a squirt of Worcestershire sauce and simmer for another few mins then serve with cous cous and veg.
