Spicy Minced Lamb and Green Rice
500g lean lamb mince (other minced meats would work too)
2 x onions chopped
4 x garlic cloves chopped
2 tsp cumin seeds
2 tbs ground cumin
30g fresh ginger chopped
2 red chillis sliced finely
2 spring onions sliced finely
250g baby spinach
Handful fresh coriander
4 tbs low salt soy sauce
4 tbs Chinese rice wine vinegar
2 tbs olive oil
Heat 1/2 tbs olive oil in a saucepan, once hot add spring onion and gently fry for a minute or so, then add 150g basmati rice and 400ml water, bring to the boil then simmer for around 14 mins until water has been absorbed.
Meanwhile heat a large frying pan with the remaining 1.5 tbs oil. Once hot add mince, ground cumin and cumin seeds and cook for around 5 mins stirring gently and breaking up mince. Then add onion to the pan and cook for a further 2 mins, and then the chilli, garlic and ginger and fry for another couple of mins. Finally add soy sauce, rice wine, honey and season well, fry for another couple of mins.
Meanwhile wilt the spinach by adding it to a colander pouring boiling water over it and then cold water, squeeze excess water out and chop roughly along with coriander, now add this to the rice pan and mix well.
