Sausages and Caramelised Onions and Cous Cous

Serves 2

Ingredients

8 x Heck chicken Italia sausages
1 large red onion, sliced
1 tbs balsamic vinegar
1 tbs olive oil
100g dry cous cous
250ml veg stock
150g mixed frozen veg

Method

Boil a kettle and add water to a small saucepan, pre heat grill and place sausages on a grill pan turning regularly until cooked through and golden brown. Meanwhile, heat oil in a frying pan, once hot add onion and balsamic and stir fry until soft and caramelised (about 8-10 mins). Meanwhile, add veg to boiling water and simmer for 7 mins. Pour stock over cous cous, drain veg when it is ready and stir through the cous cous, season well. Top with sausages and finally the caramelised onions.
