Serves 4


10 x heck chicken sausages
150g basmati rice
1 tbs olive oil
2 x red onions chopped
4 x garlic cloves chopped
1 x red pepper chopped
1 x yellow pepper chopped
1 x courgette chopped
100g mushrooms sliced
1 tsp garlic granules
1.5 tbs Cajun seasoning
500ml chicken stock
1 x 250g carton passata


Heat oil in a large pan, chop up sausages into bite size chunks and add to pan. Fry until golden all over (about 5-7 mins) then add onion and garlic and fry gently for another 2 mins. Add peppers, courgette, mushrooms, garlic granules and Cajun seasoning. Add a splash of water to stop it from sticking and fry for another 3-4 mins. Now add passata, stock and rice. Bring to the boil and simmer for 20 mins or until all liquid is absorbed but a silky sauce remains coating everything.
