Sunday in the U Fit House is known as #SundayFunday

Each week we will share one our BRILLIANT recipes with you - so that you can prep your healthy week in style and add a little super tasty meal to your plan. Eating healthy doesn't have to be about boring rabbit food, bland food, or chicken & broccoli feasts!

Chicken and Avocado Salad

Serves 1


125g Chicken mini fillets

½ avocado chopped

Handful chopped cherry tomatoes

Handful green leaves

Handful chopped cucumber

Juice of half a lemon

Tsp balsamic vinegar

For the slaw-

1 carrot grated

¼ red cabbage shredded

¼ white cabbage shredded

1 red onion grated

grind of salt and pepper

two tbs full fat mayo

two tbs of 0% fat Greek yog

squeeze of lemon juice.


Prepare slaw by mixing all ingredients together and set to one side.

Season mini fillets and place under grill for around 5 mins each side until cooked through and golden. Serve over salad and avocado. Top with slaw and drizzle with lemon juice and balsamic.
