Poached Eggs, Avocado and Pumpkin Seeds
Handful tomatoes chopped
Handful mushrooms sliced
1 tbs avocado oil
1 tsp pumpkin seeds
½ tsp balsamic glaze
Heat oil in a frying pan, add mushrooms and tomatoes and stir fry gently for a few mins. Meanwhile add poached eggs to a saucepan of simmering water for 3 mins. Add tomatoes and mushrooms to a bed of rocket and top with poached eggs, pumpkin seeds, avocado and drizzle with balsamic glaze.
