Piri Piri Slow Cooker Pork, Chickpeas and Brown Rice
1 tbs olive oil
400g pack of lean pork medallions sliced thinly
2 onions chopped
1 red pepper chopped
1 yellow pepper chopped
1 aubergine chopped
1 can of chickpeas drained
2 tbs tomato paste
300g long grain brown rice
2 cans of chopped tomatoes
1.5 litre veg stock
1 tbs piri piri seasoning
1 tsp chilli flakes
2 tsp mixed herbs
lots of salt and pepper
Literally throw it all in a slow cooker and leave on medium for 4-5 hours or low for 7-8 hours. Check every couple of hours and add more water if needed, stir and season at these intervals too.
