Harissa Sausage and Butter Bean Mash
Recipe serves 2
1 can butterbeans
Tbs unsweetened almond milk
2 red onions sliced
1 red pepper sliced
1 green pepper sliced
2 garlic cloves chopped
250ml chicken stock
2 tbs harissa paste
8 heck sausages
Peas and kale
1.) Peel and chop potato, place in a pan and cover with cold water. Bring to the boil and simmer for 20 mins.
2.) Whilst that's simmering, heat a tsp olive oil in a large frying pan, add peppers, onions and garlic, fry gently for 15 mins.
3.) Add harissa to chicken stock and pour over veg mix - turn up heat high and simmer for a few mins until it starts to thicken.
4.) Grill sausages turning until browned - about 8- 10 mins
5.) Steam or boil green veg
6.) Add butter beans to potato pan and cook for a further 5 mins, drain and mash well with butter and milk. Season.
7.) Place mash veg and sausage on plate and top with the harissa veg
