3 x bacon medallions
2 x eggs
3 x heck chicken italia sausages
Handful mushrooms and cherry tomatoes
1. Pre-heat grill set a small saucepan of water to boil.
2. Place sausages on grill tray and under grill turning regularly for 5 mins, now add bacon medallions.
3. Heat oil in a frying pan, add tomatoes and mushrooms, fry gently. Add spinach at the end with a splash of water and allow to wilt for a few seconds.
4. When water is boiling reduce heat to a simmer and crack an egg slowly into the water, time for 3 minutes. Keep turning bacon and sausages.
