Butternut Spaghetti Bolognese
Serves 4
Ingredients
1 tbs olive oil
500g lean beef mince
1 large onion chopped
3 garlic cloves chopped
1 red pepper chopped
1 carrot grated
Handful mushrooms sliced
200ml beef stock
1 x can chopped tomatoes
1 tbs tomato paste
1 tbs Worcester sauce
2 tsp oregano
1 dried bayleaf
2 x packs butternut spaghetti (Sainsburys)
Method
Heat oil in a large sauce pan, add onion and fry gently for a few minutes, now add garlic and simmer for a couple more mins, now turn up heat to medium-high and add mince, cook until browned stirring and breaking up mince as you go. Now add pepper, carrot and mushrooms, cook for a couple more mins then add chopped tomatoes, stock, paste, Worcester sauce, oregano and finally the bayleaf. Simmer on low for 40 mins. Serve on a bed of your microwaved butternut spaghetti.
