Banana Bread Recipe
400g banana mashed
1 tbs coconut oil melted
125ml almond milk
300g buckwheat flour
2 tsp baking powder
1 tsp bicarbonate soda
3 tsp cinnamon
2 tsp mixed spice
1/4 tsp Himalayan pink salt (or sea salt is fine)
60g dark choc chips
1️. Pre heat oven to 180c, place mashed banana, almond milk, coconut oil and vanilla in a bowl and mix well.
2️. In a separate bowl, place buckwheat flour, baking soda, bicarbonate, salt, cinnamon and mixed spice and mix well. Now add banana mix to this mix bowl and combine well until a dough consistency is formed. Add 50g of the dark choc chips to the dough and mix in well.
3️. Line a loaf tin with greaseproof and pour in the dough, sprinkle the remainder of the choc chips on top.
4. Bake for 40-45 minutes, until the top is golden and a skewer comes out clean when inserted in the centre of the loaf.
SLICE INTO 12
