Baked Aubergine and Turkey Mince Keema
2 tbs coconut oil
1 tbs balsamic
1 large onion chopped
4 garlic cloves chopped
1 green chilli chopped
4 inch stick of ginger grated
500g 2% fat turkey mince
1.5 tbs Garam masala
1.5 tbs cumin
1 tbs curry powder
0.5 tbs turmeric
0.5 tbs coriander leaf
1 green pepper chopped
1 yellow pepper chopped
1 can chopped tomatoes
1 tbs tomato paste
2 handfuls frozen peas 🌟Method🌟
1️. Preheat oven to 200c - cut aubergines in half lengthways, score flesh with a knife, rub with a tsp of coconut oil, a tbs balsamic vinegar and season well. Place on baking tray and into over flesh side up.
2. Heat the rest of the oil gently in a large saucepan, add onion and garlic and stir fry gently for a few mins until soft. Now add ginger and chilli, stir fry for another couple of mins. Now add mince, turn up heat and cook well breaking up the meat for about 8 mins or until cooked through. Now add peppers and spices. Cook gently for a couple of mins and then add chopped tomatoes and tomato paste. Simmer for 20 mins then add peas, and simmer for another 10 mins.
3️. Remove aubergine from oven and serve with keema and a side of rocket or spinach.
