Butternut squash noodle stir fry

Serves 2

Ingredients

  • 1 Pack butternut squash noodles – available in Aldi or Sainsburys
  • 1 pack king prawns or other protein source
  • Baby Sweetcorn
  • Mangetout
  • 1 small red pepper
  • Lemongrass – chopped finely
  • 1 tsp fresh ginger
  • ½ tsp chilli flakes
  • ½ tsp sweet chilli sauce
  • Pak choi – optional
  • 1 tsp light soy sauce

Method

1. Create a marinade using your sweet chilli sauce, lemongrass, ginger and chilli flakes.

2. Defrost your prawns and coat in the marinade.

3. Ina good non stick pan add your veggies and stir fry for 5-10 mins

4. In another pan add your prawns and stir fry for 5 mins on a high heat – until cooked.

5. Remove the vegetables from the pan and add your butternut squash noodles. Stir fry with your soy sauce for 5 mins and serve
