Caramelised onion, chicken & goatscheese pizza

Serves 2

Ingredients

1 Chicken breast

1 Red onion - sliced thinly

1/2 Sweet red pepper

1/2 Yellow pepper

Salad - mixed leaves

Balsamic glaze

1/4 tsp Cayenne pepper

1/4 tsp Smoked paprika

1/4 tsp Chipotle chilli flakes

For the base:

1 Cup wholemeal spelt flour

1/2 Cup warm water

1/2 Cup natural yoghurt

1/2 tsp yeast

Pinch of salt

2 tbsp Olive oil


Method

1. Add all the ingredients to a bowl and mix until a

dough is formed. Knead, and set aside for 10 mins.

2. In a pan, add your chicken breast and seasoning

(cayenne pepper, chilli flakes and smoked paprika).

Fry for 6-8 minutes, until cooked before adding your

peppers and aubergine. Cook for a further 5

minutes until softened and set aside in a bowl.

3. Heat a flat based frying pan until very hot, grab

your dough and separate into small balls - I made 2

large flatbreads but adjust to your needs

accordingly.

4. Stretch the dough out with your hands and place

onto the pan .Cook for 2 mins on one side, before

flipping. Press gently on the bread using your hands

to brown. The dough should rise a little whilst

cooking.

5.Transfer to a plate, top with your chicken,

vegetables and a lashing of goats cheese with a side salad
